Preheat oven to 375°F. Grease 8 x 8 baking pan with cooking spray.

Prepare crust. Stir flour, ½ cup sugar, baking powder, and salt in medium bowl.

Cut cold butter into small ¼-inch cubes. Add to flour mixture.

Rub the butter between your fingertips, smearing it into the flour to create small flakes.

Crack egg in small bowl. Throw away shells and wash your hands. Whisk until smooth.

Add egg to flour. Stir well. Mixture will be dry and powdery.

Scoop 1 ½ cups flour mixture into baking pan. Set remaining mixture aside. Press to make a firm crust.

Prepare filling. Add blueberries, ¼ cup sugar, and cornstarch to large bowl.

Juice lemon. Add to blueberries. Stir well.

Pour blueberry mixture over crust.

Sprinkle remaining flour mixture over blueberries.

Bake 40-45 min, until top is golden. Serve warm as a crumble or refrigerate and cut into bars. TASTE & SHARE!
